Protein Mini Muffins

Delicious bite sized Protein Mini Muffins!

Ingredients:

  • 2 scoops Double Chocolate CORE Protein Shake
  • 2 Tbsp Natural Peanut Butter
  • 1 Tbsp Coconut Oil
    (Melt these together first in bowl, then mix the rest of the ingredients in)
  • 6 Egg Whites
  • 2 tsp Vanilla
  • 1 Banana (mashed)
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1/2 tsp Cinnamon
  • 1/3 cup Coconut Flour

Instructions:

  • Mix all ingredients together and put batter into muffin pan
  • Preheat oven and bake at 350 degrees for 15 minutes
  • Makes 12 mini muffins | 4 muffins = 1 serving

  • These are great! Any caloric information or protein per muffins?

    • Hi Adam, there are 100 calories and 15 grams of protein per scoop of CORE Protein. So figure about 60 grams of protein and 600 calories with all the other ingredients combined (I checked the amounts). Divide that by 12 muffins and we get 5 grams protein and 50 calories per mini muffin. That’s 20 grams and 200 calories per serving (4 muffins).

    • Hi Breanne, it all depends on how much protein you need. If you are trying to build more muscle, the more protein you’ll want to take in. Look at it as to how much protein your diet needs.
